- 8 lb. cucumbers, sliced
- 8 white onions, sliced
- 2 sweet red peppers, cut in strips
- 3 cloves garlic
- 1/3 c. kosher salt (regular)
- 4 c. white vinegar
- 5 c. sugar
- 1 Tbsp. mustard seed
- 2 tsp. celery seed
Directions

1Put cucumbers, onions, red peppers and garlic in a large bowl. Cover with ice cubes and let stand 3 hours.

2Drain vegetables and remove garlic, if desired.

3Make syrup by combining vinegar, sugar, mustard seed and celery seed.

4Pour equal amounts of syrup into 2 large pots and bring to a boil.

5Add drained vegetables and bring to a rolling boil.

6Pack into hot sterilized jars.

7Fill to brim and seal.
