Ingredients

  • 1/4 cup brown sugar
  • 3/4 cup butter, chopped
  • 1 None egg, lightly beaten
  • 1 tsp vanilla extract
  • 3 1/3 cups self-rising flour, sifted
  • 3 oz dates, chopped
  • 3 oz pistachios, chopped
  • 3 oz candied ginger, chopped
  • None None demerara sugar, to sprinkle (optional)

Directions

    Heat sugar and butter over low heat until combined. Add egg and vanilla. Mix into flour to form a stiff dough. Knead in dates, pistachios and ginger.

    Divide dough into 3 portions then roll each into a 1 1/2 inch thick log. Wrap in parchment paper and chill until firm.

    Preheat oven to 350°F. Line 2 baking trays with parchment paper.

    Slice dough into 1/4 inch slices. Arrange on trays. Sprinkle with sugar, if desired. Bake for 10-15 mins, until golden. Let cool on trays for 5 mins then transfer to a wire rack to cool completely.
