  • 5 whole Medium Boiled Potatoes, Peeled And Shredded
  • 1 teaspoon Ginger, grated
  • 1/2 cups Fresh Coriander Or Cilantro, Coarsely Chopped (optional)
  • 1/4 cups Shredded Cheese (I Use A 3-cheese Mix, Or Use Your Favorite)
  • 1 teaspoon Salt, Or To Taste
  • 1/4 teaspoons Ground Black Pepper
  • 8 whole Tortillas (or Roti)
  • 3 Tablespoons Olive Oil, Or Flavorless Oil Of Choice

Directions

    In a large bowl, mix together shredded potatoes, ginger, coriander, cheese, salt and pepper.

    Take 1 tortilla and lay it on a flat surface.

    Add 2 tablespoons of the potato mixture and spread it evenly on the tortilla.

    Cover the filled tortilla with another tortilla and press the edges to seal it.

    Heat a non-stick pan on high for 2 minutes and then reduce the flame to medium.

    Place the potato stuffed tortilla into the pan, with 1/2 teaspoon of oil in the pan.

    Spread another 1/2 teaspoon of oil evenly on the side facing up.

    Let it cook for 2 minutes.

    Now, flip the tortilla to the other side.

    Cook for 2 minutes or until browned to your liking.

    Transfer the quesadilla to a serving dish and repeat assembling and cooking the rest.
