- 1 prepared graham cracker crust
- 14 cup sugar
- 1 tablespoon key lime zest
- 1 (8 ounce) package cream cheese (at room temperature)
- 1 (14 ounce) can sweetened condensed milk
- 13 cup vanilla instant pudding mix
- 1 14 teaspoons unflavored gelatin
- 1 cup fresh key lime juice
- 1 teaspoon vanilla
Directions

1Process the sugar and lime zest until the sugar turns bright green and resembles pickle relish.

2Add cream cheese and process until combined.

3Add sweetened condensed milk and pudding mix and process until smooth.

4Scrape down sides of bowl.

5Stir gelatin and 2 tablespoons of the lime juice in a small bowl.

6Heat in microwave for 15 seconds; stir until dissolved.

7With machine running, pour in gelatin mixture, the rest of the lime juice, and the vanilla.

8Mix until thoroughly combined.

9Pour into graham crust, cover with plastic, and chill for 3 hours.
