- 1 2/3 cups caster sugar
- 14 Hellmann''s Light Mayonnaise dollops*
- 1 5/8 cups self raising flour
- 4 eggs
- 1 baking powder level teaspoon
- 2 teaspoons vanilla extract
- 1 lemon
- 7/8 cup cream cheese
- 1 1/2 tablespoons icing sugar to taste
Directions

1Pre-heat the oven to 180°C and place 12 paper cases into a muffin tin

2Beat the mayonnaise with the sugar. Add the eggs one at a time. Add the vanilla extract.

3Sift the flour and baking powder together, then add to the mix.

4Spoon the final mixture into paper cases, and bake in the oven for around 15-20 minutes.

5In a bowl,mix all the icing ingredients together.

6Once the cakes are cool, spread the icing mixture over the top
