- 1 cup urad dal
- 2 cups white rice
- 1/4 cup cooked rice
- salt TO TATSE
Directions

1Pick and wash both the rice and urad dal.

2Soak the urad dal and rice separately for 4-5 hours.

3Drain the soaked urad dal and rice. reserve the water.

4Grind the urad dal, with some of the reserved water till you get a smooth and fluffy batter.

5Grind the rice and cooked rice to make a smooth batter.

6Mix both the batters together in a large bowl or pan. add salt and mix well.

7Cover and let the batter ferment for 12- 18 hours, in a warm place or cover it with warm cloth to create heat

8After the fermentation process is over, the batter will become double in size and rise.

9Gently mix the batter.

10Pour the batter in the moulds steam the idlis in a pressure cooker or steamer.

11If using pressure cooker remove the vent weight.whistle.

12Steam for 15 mins or until the idlis are done.

13Serve the steaming hot idlis with coconut chutney and sambar.
