- 1/2 cup Bisquick baking mix
- 1 cup buttermilk
- 1/3 cup margarine or 1/3 cup butter, melted
- 1 teaspoon vanilla
- 3 eggs
- 1/4 cup coconut
Directions

1Heat oven to 350. Grease pie plate. Beat all ingredients until smooth, 30 seconds in blender on high or 1 minute w/ hand blender. Pour into pie plate. Bake for 40-45 minutes. Cool 5 minutes. ENJOY!
