- 3/4 cup sugar
- 1/2 cup Bisquick
- 2 eggs
- 1 lb. cream cheese, softened
- 2 tsp. vanilla
- 1/2 tsp. lemon peel, grated
- 2 tbsp. sugar
- 2 tbsp. vanilla
- 1 cup sour cream
Directions

1Heat oven to 350F.

2Grease 9-inch pie plate.

3Place all ingredients except topping in blender container.

4Blend on high speed, stopping blender occasionally to stir, until smooth (about 3 minutes).

5Or beat in large bowl on high speed of electric mixer, scraping bowl constantly, for 2 minutes.

6Pour into plate.

7Bake just until puffed and center dry, about 30 minutes (do not overbake).

8Spread cheesecake topping carefully over top.

9Cool.

10Refrigerate until chilled, at least 3 hours.

11Serve with sweetened fresh fruit.
