- 3/4 c. sugar
- 1/2 c. Bisquick mix
- 2 eggs
- 2 (8 oz.) pkg. cream cheese, cut in 1-inch squares and softened
- 2 tsp. vanilla
- 1/2 tsp. grated lemon peel (optional)
Directions

1Heat oven to 350°.

2Grease pie plate.

3Place all ingredients except topping in blender.

4Blend on high speed, stopping blender occasionally to stir until smooth (about 3 minutes).

5Pour in pie plate.

6Bake just until puffed and center is dry, about 30 minutes. (Do not overcook.)

7Mix topping and spread carefully over top. Cool.

8Refrigerate until chilled, at least 3 hours.

9Serve with sweetened fresh fruit, if desired.
