Ingredients: 1 lb. ground turkey or beef; 1/2 c. chopped onion; 1 pkg. taco seasoning mix; 4 oz. shredded Cheddar or Jack cheese; 3/4 c. Bisquick; 3 eggs; 2 sliced tomatoes; 1 1/4 c. skim milk or 2%

1 lb. ground turkey or beef
1/2 c. chopped onion
1 pkg. taco seasoning mix
4 oz. shredded Cheddar or Jack cheese
3/4 c. Bisquick
3 eggs
2 sliced tomatoes
1 1/4 c. skim milk or 2%

Preheat oven to 400°.

Spray 10-inch pan.

Cook meat and onions; stir in seasoning mix, cook to blend.

Spread in pie pan. Beat milk, Bisquick and eggs until smooth.

Pour over meat mixture.

Bake 25 minutes, then top with tomatoes and cheese. Bake 8 to 10 minutes, until knife inserted comes out clean.

Top with lettuce and tomatoes, if desired.
