- 1 lb. skinless, boneless chicken breasts
- 1 (14 1/2 oz.) can chicken broth
- 2 Tbsp. soy sauce
- 1 Tbsp. cornstarch
- 1/2 c. peanut butter
- 2 cloves garlic, minced
- 1 medium onion, sliced into rings
- 2 Tbsp. white wine or water
- 1/8 to 1/4 tsp. ground red pepper
- 1 Tbsp. oil
- 1/4 tsp. ginger
Directions

1Cut chicken into bite-sized pieces.

2Set aside.

3For sauce, stir together chicken broth, soy sauce, wine or water, cornstarch and red pepper.

4Blend in peanut butter; set aside.

5Preheat skillet; add oil.

6Stir-fry garlic and ginger in hot oil for 15 seconds.

7Add onion.

8Stir-fry 2 to 3 minutes.

9Remove vegetables. Add chicken.

10Stir-fry until cooked.

11Stir sauce.

12Add to skillet.

13Cook and stir until thick and bubbly.

14Cook and stir 2 minutes.

15Add vegetables and stir to coat.

16Heat through.

17Serve on top of rice or linguine.
