  • 3 c. grated zucchini
  • 1 onion, chopped
  • 1 1/2 c. Bisquick
  • 4 eggs
  • 1/2 c. Parmesan cheese
  • 1/2 c. oil
  • grated Mozzarella cheese

Directions

    Mix first three ingredients together with a mixer.

    Add eggs one at a time.

    Blend well, then add Parmesan cheese and oil. Continue to blend well.

    Grease a 10-inch pie plate.

    Pour mixture in.

    Top with grated Mozzarella cheese.

    Bake at 350° for 30 to 60 minutes.
