- 1 lb. dry pinto beans
- 1 (1 lb.) can tomatoes
- 1 large onion
- 8 slices bacon, cut in 2-inch lengths
- 3/4 c. sliced celery
- salt to taste
- 3/4 tsp. cinnamon
- 3 Tbsp. vinegar
- 2 qt. water
- 6 Tbsp. sugar
Directions

1Wash beans, place in 6-quart kettle with 3 quarts water and bring to simmer.

2Cover.

3Cook 4 hours or until tender.

4Mix remaining ingredients with beans and cooking water.

5Place in 4-quart casserole.

6Cover and bake in 350° oven for 2 to 3 hours, or until done.

7Add water, if necessary.

8Serves 10 to 12.
