  • 1 1/2 Tbsp. shortening
  • 4 large tomatoes
  • 1 1/2 tsp. turmeric
  • 1 1/2 tsp. curry powder
  • 3 medium onions
  • 3 cloves garlic
  • 3 tsp. salt
  • 1 1/2 lb. chicken thighs
  • pinches of oregano, chili powder, ginger and black pepper

Directions

    Mince onions and garlic and fry in large sauce pan until brown.

    Add turmeric, curry, salt, chili powder, oregano, ginger and pepper.

    Stir well and simmer for 5 minutes.

    Add chicken and fry for 5 - 10 minutes.

    Add 1 cup of warm water, cover and cook for 1 1/2 hours.
