  • 1 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. curry powder
  • 1 c. milk
  • 1 egg
  • 1/2 c. salad oil

    Beat remaining ingredients with beater until smooth.

    Heat oil to 375° in a skillet.

    Slice eggplant into 1/4-inch slices.
