- 1 tsp. baking powder
- 1 tsp. salt
- 2 tsp. curry powder
- 1 c. milk
- 1 egg
- 1/2 c. salad oil
Directions

1Wash eggplant.

2Beat remaining ingredients with beater until smooth.

3Heat oil to 375° in a skillet.

4Slice eggplant into 1/4-inch slices.
