- 6 Tbsp. corn meal
- 6 c. milk, scalded
- 1/2 c. brown sugar
- 1/4 lb. butter
- 1 tsp. salt
- 1 tsp. grated lemon rind
- 1 tsp. ginger
- 1/2 lb. raisins
- 6 eggs, beaten whole
Directions

1Combine the corn meal with the scalded milk.

2Add the sugar, butter and salt.

3Let the mixture cool, then add the lemon rind, ginger, raisins and eggs.

4Bake in a buttered 3-quart casserole, set in water, for 2 hours in a slow oven (300°).
