- 3 cups whole milk
- 1/2 stick butter, plus a little additional butter for greasing the baking dish
- 1/2 cup cornmeal
- 2 tablespoons all purpose flour
- 3/4 teaspoon kosher salt
- 1/4 cup blackstrap molasses
- 2 eggs, beaten
- 1/4 cup sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground allspice
- 1/2 cup golden raisins
- Vanilla ice cream, for serving
- 6 Braeburn, Rome or Empire apples, washed, dried, peeled and cored
- 3 tablespoons unsalted butter
- 1/2 cup firmly packed light-brown sugar
- Zest of 1/2 lemon and the juice of 1 lemon
- 1 teaspoon ground ginger
Directions

1Preheat the oven to 250 degrees F. Grease a shallow 2- to 2 1/2-quart baking dish with butter.

2Pudding: In a medium saucepan, combine the milk and butter and warm over low heat until the butter melts.

3In a medium bowl, whisk together the cornmeal, flour, and salt.

4In a separate bowl, whisk together a little of the milk mixture and the molasses and then whisk this into the cornmeal mixture.

5Add the entire cornmeal mixture to the pan and whisk until the ingredients are fully integrated.

6Cook, stirring constantly, for 2 minutes.

7Whisk the eggs in a medium bowl.

8Gradually whisk in some of the cornmeal mix to temper the eggs.

9Pour everything back into the saucepan and gently whisk in the sugar, cinnamon, nutmeg, allspice, and raisins.

10Remove from the heat.

11Pour into the baking dish and bake until it looks like a slightly moist version of corn bread or a steamed pudding, 2 hours.

12For the apples: Place the apples on a flat surface and cut them each into 8-10 equal-sized wedges.

13Heat a large skillet and add the butter.

14Toss in the apples and stir to coat them with the butter.

15Sprinkle them with the brown sugar and cook, stirring from time to time with a wooden spoon, until the apples are tender and yield slightly when pierced with the tip of a small knife.

16Add the lemon zest, lemon juice and ground ginger.

17Stir to blend.

18Keep them warm while the pudding cooks.

19When the pudding is cooked, allow it to cool and top with the apples.
