- 2 Tbsp. shortening
- 2 c. sifted all-purpose flour
- 1/2 tsp. salt
- 1/2 c. shredded process cheese
- 1/2 to 2/3 c. water
- hot fat or oil
- curry powder
Directions

1Cut shortening into flour and salt.

2Add cheese.

3Stir in enough water to make soft dough.

4Knead on floured surface about 10 minutes.

5Let rest 10 minutes.

6Roll very thin, to 16 x 10-inches on floured surface.

7Cut in 2 1/2-inch circles.

8Fry in deep hot fat (385°) until puffed and golden, 2 to 3 minutes, turning once. (A perfect puri resembles a fragile bubble.

9Discard those which don't puff.)

10Drain.

11Serve warm with curry.
