- 3 eggs
- 1 c. oil
- 2 tsp. vanilla
- 2 c. grated squash
- 2 c. sugar
- 3 c. flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- 2 1/2 tsp. cinnamon
- 1 c. chopped nuts
Directions

1Blend together eggs, oil and vanilla.

2Stir in all the dry ingredients and mix thoroughly by hand.

3Add chopped nuts.

4Pour into two well-greased and floured loaf pans.

5Bake in a 325° oven for 1 hour and 10 minutes.

6Keeps well in the refrigerator and freezes well.
