  • 3 eggs
  • 1 c. oil
  • 2 tsp. vanilla
  • 2 c. grated squash
  • 2 c. sugar
  • 3 c. flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 1/2 tsp. cinnamon
  • 1 c. chopped nuts

Directions

    Blend together eggs, oil and vanilla.

    Stir in all the dry ingredients and mix thoroughly by hand.

    Add chopped nuts.

    Pour into two well-greased and floured loaf pans.

    Bake in a 325° oven for 1 hour and 10 minutes.

    Keeps well in the refrigerator and freezes well.
