- 24 vanilla wafers
- 3 (8 oz.) pkg. cream cheese, softened
- 3 eggs
- 1 c. sugar
- 1 tsp. vanilla
- 1/4 tsp. ground nutmeg
- raspberry preserves
Directions

1Line 24 muffin pans with paper or foil baking cups.

2Place one wafer in bottom of each pan.

3In a large bowl, combine cream cheese, sugar, eggs, vanilla and nutmeg.

4Beat at medium speed until smooth, scraping sides of bowl occasionally.

5Pour mixture into prepared muffin pans, filling 2/3 full.

6Bake at 325° for 15 to 20 minutes, or until set.

7Cool.

8Cover pan; refrigerate overnight.

9Before serving, spoon 1 heaping teaspoonful preserves over each cheesecake.

10Remove paper baking cups.

11Yields 24 cheesecakes.
