- 12 oz new potatoes, halved
- 10.5 oz sweet potato, peeled, sliced
- 7 oz green beans, trimmed
- 7 oz bean sprouts, trimmed
- 3 stalks celery, thickly sliced
- 1 None carrot, finely sliced
- 1 None small cucumber, sliced lengthwise
- 3 None hard-boiled eggs, peeled, halved
- 1 cup satay sauce
- 1 cup crunchy peanut butter
- 1/3 cup chicken stock
- 2 tsp sambal olek
- 2 cloves garlic, minced
- 1 tbsp kecap manis (sweet soy sauce)
- 1 tbsp lime juice
Directions

1Place new potatoes in a large saucepan and cover with cold water. Bring to a boil and cook for 8-10 mins. Add sweet potato and cook for 5 mins, until tender. Drain and transfer to a platter.

2Meanwhile, blanch green beans for 30 seconds then rinse under cold running water. Add beans to platter with bean sprouts, remaining vegetables and eggs.

3Gently heat satay sauce, peanut butter, stock, sambal olek and garlic, stirring, until smooth. Bring to a simmer then remove from heat. Add kecap manis and lime juice. Drizzle over vegetables.
