Ingredients

  • 1 gal. green tomatoes, quartered
  • 1 qt. onions, chopped coarsely
  • 1 qt. bell pepper, chopped coarsely
  • 1/2 c. green hot pepper, chopped
  • 1/2 c. salt
  • 1 qt. red vinegar (apple cider vinegar)
  • 5 c. sugar

Directions

    Mix vinegar, salt, sugar and hot pepper.

    Combine and heat. Add tomatoes, onion and bell pepper.

    Bring to a boil, but don't let boil.

    Pack in hot jars and seal.

    Let ripen for 4 to 6 weeks. Delicious, especially with fish.
