  • 1 medium onion, minced
  • 2 Tbsp. butter
  • 1 c. long grain, raw white rice
  • 2 c. hot chicken broth or broth from bouillon cubes
  • 2 or 3 stalks celery (optional)

Directions

    Saute onion in butter until transparent.

    Add broth or make broth from bouillon cubes and water in same utensil, keeping onions in same utensil.

    Add rice to hot broth and onions and bring to boil.

    Put mixture in casserole, cover and bake at 325° to 350° for 20 to 30 minutes.

    Feeds 4 hungry or 6 polite people!
