Iowa Corn Chowder

  • 4 slices bacon, chopped
  • 1 c. chopped onion
  • 2 c. diced potatoes
  • 3 (16 oz.) cans whole kernel corn
  • 2 Tbsp. parsley
  • 1 (12 oz.) can evaporated milk
  • 1/4 c. flour
  • 2 1/2 c. water
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. paprika

Directions

    Cook bacon until crisp in Dutch oven; add onions and saute. Add potatoes, 2 cups water, salt and pepper.

    Cover and simmer 20 minutes.

    Remove from heat.

    Add corn with can liquid and evaporated milk.

    Blend 1/2 of water with flour.

    Return to stove. Add flour mix, stirring constantly, over medium heat until thickened.

    Sprinkle with paprika.
