Irish Chili

Ingredients

  • 2 Tbsp. olive oil
  • 1 medium onion
  • salt, pepper and chili powder
  • 2 c. shredded Cheddar cheese
  • 1 1/2 lb. chop meat
  • 1 clove garlic
  • 1 can pinto beans
  • 1 to 2 cups mashed potatoes

Directions

    Brown onion and garlic in olive oil.

    Add chop meat and brown. Drain fat from meat and discard.
  3. 3
    Add pinto beans and juices from can.
  4. 4
    Add salt, pepper and chili powder to taste.

    Simmer 20 to 30 minutes.

    Place in 10 x 10-inch casserole dish.

    Place shredded Cheddar cheese on top of meat.

    Place potatoes on top of cheese. Place in preheated oven at 350° and bake for 1/2 hour.

    Serves 4. Great for leftover chop meat and/or potatoes.
