- 2 Tbsp. olive oil
- 1 medium onion
- salt, pepper and chili powder
- 2 c. shredded Cheddar cheese
- 1 1/2 lb. chop meat
- 1 clove garlic
- 1 can pinto beans
- 1 to 2 cups mashed potatoes
Directions

1Brown onion and garlic in olive oil.

2Add chop meat and brown. Drain fat from meat and discard.

3Add pinto beans and juices from can.

4Add salt, pepper and chili powder to taste.

5Simmer 20 to 30 minutes.

6Place in 10 x 10-inch casserole dish.

7Place shredded Cheddar cheese on top of meat.

8Place potatoes on top of cheese. Place in preheated oven at 350° and bake for 1/2 hour.

9Serves 4. Great for leftover chop meat and/or potatoes.
