Ingredients

  • 2 c. brown flour
  • 2 c. white flour
  • 1 Tbsp. wheat germ
  • 1 Tbsp. bran
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. sugar
  • pinch of salt
  • 2 to 2 1/2 c. buttermilk
  • 1 egg (if desired)
  • 2 oz. margarine

Directions

    Preheat oven to 375°.

    Sieve flour, baking powder and soda in a bowl.

    Add wheat germ and bran, sugar and salt and mix all together.

    Crumb in margarine or butter.

    Make a well in the center of bowl and pour in buttermilk (and beaten egg); mix well, until mixture is one large piece of dough.

    Sometimes extra buttermilk may be needed.

    Turn onto greased tin.

    Press down until required shape is obtained.

    Make a cross on dough with a knife and brush top with a little milk.

    Bake for 45 minutes. Test with a skewer.
