“Irish” Soda Wheat Bread

  • 1 whole Egg, Lightly Beaten
  • 2 cups Buttermilk (I Did The Milk-Vinegar Substitute)
  • 1/4 cups Melted Salted Butter (or Applesauce With 1tsp Salt)
  • 3 cups Whole Wheat Flour
  • 1 cup All-purpose Flour
  • 1 teaspoon Baking Soda

    1. Preheat the oven to 400F or 200C.

    2. In a mixing bowl, add in the egg and then gradually add the buttermilk, whisking to mix.

    3. Beat in melted butter until mixed.

    4. In another bowl, sift and mix the flours and baking soda.

    5. Stir in the buttermilk mixture into the sifted dry ingredients. The dough should be thick, like brownie mixture. If it's too runny, add 1 tablespoon of flour at a time and if too dry, add 1 tablespoon buttermilk at a time.

    6. Plop the dough into a medium loaf pan or a round baking tin.

    7. With a sharp wet knife, slit the tip with 3 long gashes (I forgot this so the top burst open. Still good though.)

    8. Bake for 40-50 minutes. Make sure the top is really browned. I took mine out a tad too early and the centre was slightly uncooked. But still yummy.

    9. Let cook thoroughly before slicing. It's very crumbly. I kept mine sliced, wrapped in baking paper and then plastic foil before freezing.

    This is lovely spread with jam or even a squirt of honey.
