Ingredients
- 3 tbsp oil
- 800 g lamb, diced
- 300 g onions, peeled and cut into wedges
- 1 clove garlic, peeled and crushed
- 1 litre lamb stock
- 1/2 tsp ground cumin
- 500 g white cabbage, chopped
- 150 g celeriac, peeled and diced
- 250 g carrots, peeled and sliced
- 400 g potatoes, peeled and sliced
Directions

1Heat the oil in a dutch oven or heavy-bottomed pot and sear the lamb until browned. Remove from the pan. Add the onions and garlic and saute for 2 mins. Return the lamb to the pan, pour in the stock and stir in the cumin. Simmer for 1 hour.

2Add the cabbage, celeriac, carrots and potatoes and cook for an additional 30 mins, or until the lamb and vegetables are tender.
