  • 2 pounds lean boneless chuck, cubed or
  • 2 pounds lamb shoulder, cubed
  • salt and pepper
  • 2 carrots
  • 2 ribs celery
  • 2 potatoes
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 2 cups water
  • 1/2 cup white wine
  • 2 T tomato paste
  • 1 bay leaf
  • 1 or 2 jalapeno peppers

    Salt and pepper the meat. Brown the cubes with garlic and onion in a dutch oven. Add the water, wine, tomato paste, and bay leaf. Bring to a boil and then simmer for one hour. Add the carrots, celery, potatoes, and peppers. Cook for 45 - 60 minutes.
