- 2 pounds lean boneless chuck, cubed or
- 2 pounds lamb shoulder, cubed
- salt and pepper
- 2 carrots
- 2 ribs celery
- 2 potatoes
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 2 cups water
- 1/2 cup white wine
- 2 T tomato paste
- 1 bay leaf
- 1 or 2 jalapeno peppers
Directions

1Salt and pepper the meat. Brown the cubes with garlic and onion in a dutch oven. Add the water, wine, tomato paste, and bay leaf. Bring to a boil and then simmer for one hour. Add the carrots, celery, potatoes, and peppers. Cook for 45 - 60 minutes.
