- 1 large onion, chopped
- 1 green pepper, chopped
- 2 Tbsp. oil
- 4 c. water
- 2 lb. beef cubes
- 1 can tomatoes, chopped
- 4 carrots, scraped and sliced
- 6 Irish potatoes, peeled and sliced
- 1 bay leaf
- 3 stalks celery, sliced
- salt
- pepper
Directions

1Cook onion and green pepper in oil until soft.

2Add water, meat and tomatoes.

3Bring to a boil.

4Cover, reduce heat and simmer 2 hours.

5Add vegetables and simmer 1 more hour.

6Add salt and pepper to taste.

7Remove bay leaf.

8Serve with whole wheat bread, butter and milk to drink.
