- 12 tablespoons tea strong
- 1 pound mixed dried fruit
- 6 ounces brown sugar soft
- 1 each eggs lightly beaten
- 1 ounce butter melted
- 9 ounces flour, all-purpose
- 1/2 teaspoon baking soda
Directions

1Place the tea, mixed fruit and sugar in a bowl, cover and leave overnight.

2Stir in the egg and melted butter.

3Sieve the flour and the baking soda together and fold them in.

4Line the bottom of a large loaf pan with baking parchment, and brush the whole inside of the pan with melted butter.

5Pour the mixture in and smooth the top.

6Bake in a preheated oven at 360 degrees F. on the middle shelf for 1 1/2 hours.

7After removing from the oven, leave in the pan for 2 to 3 minutes; then turn out of pan and cool on a wire rack.
