- 1 can pineapple tidbits (undrained)
- 1 Tbsp. honey
- 1/4 tsp. oregano
- 1/4 tsp. onion powder
- 6 large carrots, cut in pieces
- 1 Tbsp. cornstarch
- 2 Tbsp. water
- 2 Tbsp. unsalted peanuts or cashews
Directions

1Reserve pineapple tidbits.

2Combine juice and the next 4 ingredients in a saucepan.

3Bring to boil; cover and simmer for 10 minutes.

4Stir in pineapple; continue to cook 5 minutes.

5Stir cornstarch and water mixture into carrots; stir until thickens. Remove from heat.

6Place in serving dish; garnish with nuts. Makes 8 servings.
