  • 1 can pineapple tidbits (undrained)
  • 1 Tbsp. honey
  • 1/4 tsp. oregano
  • 1/4 tsp. onion powder
  • 6 large carrots, cut in pieces
  • 1 Tbsp. cornstarch
  • 2 Tbsp. water
  • 2 Tbsp. unsalted peanuts or cashews

Directions

    Reserve pineapple tidbits.

    Combine juice and the next 4 ingredients in a saucepan.

    Bring to boil; cover and simmer for 10 minutes.

    Stir in pineapple; continue to cook 5 minutes.

    Stir cornstarch and water mixture into carrots; stir until thickens. Remove from heat.

    Place in serving dish; garnish with nuts. Makes 8 servings.
