Ingredients
- 1 (8 oz.) can pineapple chunks in heavy syrup
- 2 lb. chicken parts
- 2 Tbsp. shortening
- 1 can chicken broth
- 1/4 c. vinegar
- 2 Tbsp. brown sugar
- 2 Tbsp. soy sauce
- 1 large clove garlic, minced
- 1 medium green pepper, cut up
- 2 Tbsp. cornstarch
- 1/4 c. water
Directions

1Drain pineapple chunks, reserving syrup.

2In skillet, brown chicken in shortening.

3Pour off fat.

4Add reserved syrup, broth, vinegar, sugar, soy sauce and garlic.

5Cover.

6Cook over low heat 40 minutes.

7Add green pepper and pineapple chunks.

8Cook 5 minutes more or until done.

9Stir occasionally.

10Combine cornstarch and water.

11Gradually stir into sauce.

12Cook, stirring until thickened. Serve over cooked parsleyed rice.
