- 2 cups sugar
- 2 cups flour
- 1/4 pound margarine
- 1 cup buttermilk
- 1/2 cup shortening
- 1 teaspoon vanilla
- 5 eggs separated plus 5 more whites
- 1 teaspoon soda
- 1 can coconut
Directions

1In large bowl cream margarine, shortening: add sugar and beat well:

2add egg yolks, vanilla, and beat.

3Add coconut.

4In separate bowl sift flour and soda together twice before adding to first mixture.

5Add buttermilk and flour alternating in 3 additions.

6Start with dry and end with dry until all has been creamed together.

7Fold in beaten egg whites.

8Prepare 3 well greased and floured pans.

9Bake at 350° for approximately 25 - 30 minutes, until cake springs back when pressed by hand.

10Cool completely before icing.
