Ingredients
- 3 lb. Ricotta cheese
- 1 1/2 c. sugar
- 10 eggs
- 1 Tbsp. vanilla extract
- 1 Tbsp. anise extract
- 1 tsp. cinnamon
- 1 1/2 tsp. grated orange or lemon peel
- 1 (6 oz.) drained maraschino cherries (without stems)
Directions

1Heat oven to 325°.

2Lightly grease 13 x 9-inch Pyrex dish. Combine Ricotta cheese, sugar, eggs, vanilla and anise in large mixing bowl.

3Using electric mixer blend ingredients until well mixed.

4Add cinnamon and blend in.

5Beat on high setting of mixer for about 10 minutes.

6Stir in orange/lemon rinds.

7Fold in drained cherries.

8Pour into baking dish and bake for 1 hour at 325° or until browned.

9Cool completely and refrigerate.

10Best if made a day ahead.
