- 1 1/2 lb. chicken thighs or breasts
- 1 c. tomato juice
- 1/2 tsp. garlic powder (optional)
- 1/2 tsp. oregano
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1Remove skin (optional).

2Heat oven to 350°.

3Wash chicken parts.

4Dry on paper towel.

5Put tomato juice in baking dish; roll chicken in tomato juice, leaving the chicken skin side down. Sprinkle spices over chicken.

6Bake for 1 hour in 350° oven.

7Turn chicken over and bake an additional 1/2 hour or until tomato juice is absorbed by chicken in an 8 x 8-inch baking dish.
