Ingredients
- 4 lamb shanks
- 4 cups tomato sauce
- 1 cup red wine
- 1 cup chicken broth (if necessary)
- 4 carrots, sliced
- 1 whole onion, chopped
- 2 stalks celery, chopped
- 12 cup olive oil
- 14 cup butter
- 3 garlic cloves, chopped
- parsley
- oregano
- salt and pepper
Directions

1In a large saucepan, heat oil, and butter.

2Add lamb shanks, salt and pepper, and cook turning occaissionally until browned on all sides.

3Remove shanks, and place in a large casserole dish.

4In same pan, add garlic, celery, onions, and carrots.

5Stir, and cook 10 minutes until softened.

6Add wine, and 1 cup chicken broth of necessary.

7Pour over lamb shanks.

8Cover with tomato sauce, and top with parsley and oregano.

9Cover with Aluminum foil, and cok at 350 degree for 3 to 4 hours.

10Serve one shank per person with a heaping spoon of sauce and veges.
