  • 4 potatoes, cut in slices
  • 3 eggs, well beaten
  • 1/2 c. grated Italian cheese
  • pinch of basil leaves
  • Italian salami, cut in small pieces
  • Salad Supreme season to taste
  • salt and pepper to taste

Directions

    Fry potatoes in a little oil until tender.

    Stir constantly. Add eggs, cheese and Italian salami, beaten together.

    Do not stir. (Let form as a pie, about 5 minutes on low fire).

    Turn and cook on other side about 5 minutes.

    Turn onto plate as pie.
  6. 6
    Enjoy.
