  • 1 1/2 cup all-purpose flour
  • 1 medium onion
  • 110 grams colby cheese
  • 110 grams tasty cheese
  • 1 tsp salt
  • 2/3 cup water

    Dice onions and put into a large mixing bowl.

    Cut cheese into 1cm cubes.

    Add to the bowl.

    Add flour and salt.

    Mix well with a dinner knife, breaking up the cheese and onion as much as possible.

    Add water a bit and a time, mixing until all the flour is incorporated into a ball.

    Try to keep the mixture as dry as possible but moist enough to form a ball and avoid over mixing.

    Add enough oil to just cover the bottom of a large non-stick frying pan.

    Heat over a medium heat until very hot.

    Add mixture to the frying pan and spread out.

    Two dinner knives are good way to do this.

    Add a few holes in mixture to allow the oil to bubble up and help cook the centre of the pancake.

    After about 5 minutes when the bottom is golden, carefully flip the pancake.

    Take care to gently ease the cooked cheese off the pan before attempting to flip it.

    After about 5 minutes when the bottom is golden, remove from the pan, sprinkle with salt and cut into pieces like a pizza.
