  • 1 deep dish pie crust
  • 2 medium zucchini or yellow squash, chopped (2 c.)
  • 1 medium onion, chopped (I prefer Vidalia)
  • 1 clove garlic, minced
  • 2 Tbsp. cooking oil
  • 3 beaten eggs
  • 1 c. cream-style cottage cheese
  • 3/4 c. milk
  • 1/2 c. (2 oz.) shredded Mozzarella cheese
  • 1 (16 oz.) can tomatoes, undrained and cut up
  • 1 (8 oz.) can tomato sauce
  • 3 Tbsp. snipped parsley

    Prebake unpricked pie crust on preheated cookie sheet in 450° oven for 6 minutes.

    Remove pie crust from oven; reduce oven temperature to 325°.
