Italian Ricotta Pie

- 1/2 c. sugar
- 1 lb. Ricotta cheese
- 2 eggs
- 2 c. milk
- 1 Tbsp. vanilla
- 3 Tbsp. cornstarch (you do need this, it is not a double of following ingredients)
- 1/2 c. milk , mixed with 3 Tbsp. cornstarch
- cinnamon
- 9-inch unbaked pie crust
Directions

1In a separate bowl, mix 3 tablespoons cornstarch with 1/2 cup milk.

2In a mixing bowl, beat eggs and Ricotta cheese well, then add milk, sugar and vanilla.

3Beat with beaters.

4Add cornstarch and milk mixture to mixing bowl.

5Put into an unbaked 9-inch pie crust.

6Bake 10 minutes at 400°.

7Lower the temperature to 375° and bake another 45 minutes or until brown or until testing with a knife to see if it comes out dry.

8Remove from oven and sprinkle with a little cinnamon.
