- 3 lb. frying chicken
- 1 Tbsp. oil
- 1 medium onion, diced
- 2 to 3 green onions, sliced
- 1 large tomato, diced
- 1 bay leaf
- 1 Tbsp. tomato paste
- 3 1/2 c. weak chicken broth
- 1/2 c. peanut butter
- 1 tsp. salt
- 1 tsp. cayenne pepper
Directions

1Wipe chicken dry; brown in oil 5 to 10 minutes, turning 2 to 3 times.

2Add both kinds of onions, tomatoes and tomato paste; cook 1 minute.

3Stir in chicken broth and bring to a boil.

4Cover and boil 8 minutes.

5Turn heat to low.

6Mix peanut butter with warm water to make a paste and add this to the chicken.

7Add salt, cayenne pepper and bay leaf.

8Simmer 30 minutes.

9This is very spicy; adjust to taste.

10Makes 4 to 6 servings.
