  • 1 medium eggplant, peeled
  • 1 c. flour
  • 1 c. ice water
  • 1 slightly beaten egg
  • 2 Tbsp. cooking oil
  • 1/2 tsp. sugar
  • 1/2 tsp. salt
  • dash of pepper
  • Parmesan cheese

Directions

    Halve eggplant lengthwise; cut crosswise into 1/2-inch slices. Cut slices in 1/2-inch strips.

    Beat together flour, ice water, egg, oil, sugar, salt and pepper.

    Dip strips into mixture.

    Fry a few at a time in enough oil to cover at 365° for 4 to 5 minutes, turning.

    Drain on paper toweling.

    Sprinkle with Parmesan cheese.
