- 1 medium eggplant, peeled
- 1 c. flour
- 1 c. ice water
- 1 slightly beaten egg
- 2 Tbsp. cooking oil
- 1/2 tsp. sugar
- 1/2 tsp. salt
- dash of pepper
- Parmesan cheese
Directions

1Halve eggplant lengthwise; cut crosswise into 1/2-inch slices. Cut slices in 1/2-inch strips.

2Beat together flour, ice water, egg, oil, sugar, salt and pepper.

3Dip strips into mixture.

4Fry a few at a time in enough oil to cover at 365° for 4 to 5 minutes, turning.

5Drain on paper toweling.

6Sprinkle with Parmesan cheese.
