  • 1 1/2 c. self-rising corn meal
  • 1 Tbsp. flour (heaping)
  • 1 c. buttermilk
  • 2/3 c. salad oil
  • 2 eggs, beaten
  • 1 can cream-style corn
  • 3 to 6 jalapenos, chopped
  • 1 medium onion, chopped
  • 1 1/2 c. grated Cheddar cheese

Directions

    Mix corn meal and flour; add buttermilk, oil, eggs and corn. Beat and mix well.

    Stir in jalapenos and onions.

    Mix in about half of the cheese.

    Grease a 9 x 14-inch baking dish with butter; heat well.

    Pour in batter and sprinkle with rest of cheese.

    Bake at 375° for 35 minutes or until done.
