- 1 1/2 c. self-rising corn meal
- 1 Tbsp. flour (heaping)
- 1 c. buttermilk
- 2/3 c. salad oil
- 2 eggs, beaten
- 1 can cream-style corn
- 3 to 6 jalapenos, chopped
- 1 medium onion, chopped
- 1 1/2 c. grated Cheddar cheese
Directions

1Mix corn meal and flour; add buttermilk, oil, eggs and corn. Beat and mix well.

2Stir in jalapenos and onions.

3Mix in about half of the cheese.

4Grease a 9 x 14-inch baking dish with butter; heat well.

5Pour in batter and sprinkle with rest of cheese.

6Bake at 375° for 35 minutes or until done.
