  • 1 c. yellow cornmeal
  • 1/2 c. all-purpose flour
  • 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. sugar
  • 1 c. canned cream-style corn
  • 1 medium onion, chopped
  • 2 or more (to taste) jalapeno chili peppers, seeded and chopped
  • 1/4 lb. sharp Cheddar cheese, shredded
  • 1/2 c. oil
  • 2 eggs, slightly beaten
  • 1 c. buttermilk

    Combine dry ingredients.

    Stir in next four ingredients. Combine remaining ingredients and add to mixture.

    Stir until dry ingredients are moistened.

    Bake 25 to 30 minutes at 450°.
