  • vegetable cooking spray
  • 1 1/2 c. self-rising cornmeal
  • 1/4 c. buttermilk
  • 2 eggs, beaten
  • 1/2 c. vegetable oil
  • 1 (8.5 oz.) can cream-style corn
  • 2 or 3 chopped jalapeno peppers
  • 1 1/2 c. Cheddar cheese, shredded

Directions

    Preheat oven to 375°.

    Spray 9 x 13-inch baking pan with vegetable cooking spray.

    Place pan in oven to warm.

    Mix all ingredients, except cheese, in a large bowl.

    Pour half of batter into warm prepared pan.

    Sprinkle half of cheese over batter. Spread remaining batter over mixture and top with rest of cheese. Bake for 35 minutes.
