- vegetable cooking spray
- 1 1/2 c. self-rising cornmeal
- 1/4 c. buttermilk
- 2 eggs, beaten
- 1/2 c. vegetable oil
- 1 (8.5 oz.) can cream-style corn
- 2 or 3 chopped jalapeno peppers
- 1 1/2 c. Cheddar cheese, shredded
Directions

1Preheat oven to 375°.

2Spray 9 x 13-inch baking pan with vegetable cooking spray.

3Place pan in oven to warm.

4Mix all ingredients, except cheese, in a large bowl.

5Pour half of batter into warm prepared pan.

6Sprinkle half of cheese over batter. Spread remaining batter over mixture and top with rest of cheese. Bake for 35 minutes.

7Yields 16 servings.
