  • 2 tsp. baking powder
  • 2 large eggs
  • 3 Tbsp. sour cream
  • 1 can cream-style corn (8 1/4 oz.)
  • 1/4 c. sliced, diced or chopped jalapeno peppers
  • 1 Tbsp. canola oil

Directions

    Combine cornmeal and baking powder in a mixing bowl. In another bowl, combine corn, slightly beaten eggs, sour cream and jalapenos; add to dry mixture, stirring until all ingredients are moistened.
