- 1- 1/2 pound Ground Chuck, 80% Lean
- 1 teaspoon Kosher Salt And Fresh Ground Black Pepper (to Taste)
- 3 whole Large Baking Potatoes, Cut Into 1/4-inch Thick Matchsticks
- 2 Tablespoons Canola Oil
- Salt And Pepper, As Needed
- 2 Tablespoons Butter
- 1 whole Jalapeno, Seeded And Diced
- 2 Tablespoons Flour
- 1-23 cup Whole Milk
- 4 slices Pepper Jack Cheese
- 4 whole Ciabatta Roll
- 2 whole Jalapenos, Sliced
- 2 whole Green Onions, diced

1Divide meat into equal portions (about 6 ounces each).

2Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb.

3Season both sides of each burger with salt and pepper.

4Refrigerate until ready to grill.

5Preheat oven to 450 degrees F. In a large bowl, toss potatoes with oil and 1/2 teaspoon salt.

6Coat a baking sheet with cooking spray and spread potatoes in a single layer.

7Bake until golden and crisp, about 35 minutes.

8Remove fries with a spatula and season with salt.

9Add butter to heated medium sauce pot.

10Cook jalapeno until tender, about 57 minutes.

12When flour has cooked to a caramel brown color, add milk all at once.

18Heat a gas grill to high or heat coals in a charcoal grill until they glow bright orange and ash over.

20Grill burgers until golden brown and slightly charred on the first side, about 3 minutes for beef.

22Cook beef burgers until golden brown and slightly charred on the second side, 4 minutes for medium rare or until cooked to desired degree of doneness.

23Toward the end of the cooking process, add cheese to melt.

25To build the burgers, lay a burger on the buttom of the bun, top with a few of the fries, spoon a generous amount of the gravy, top with sliced fresh jalapeno and green onions.
