Jalapeno Soup

  • 6 c. chicken broth
  • 8 celery stalks, diced
  • 2 c. diced onion
  • 3/4 tsp. garlic salt
  • 1/2 tsp. white pepper
  • 2 lb. Velveeta cheese, cubed
  • 1 c. fresh jalapeno, diced
  • sour cream

Directions

    In large saucepan, combine broth, celery, onion, garlic salt and white pepper.

    Cook on high heat for 10 minutes until mixture reduces and thickens slightly.

    In blender or food processor, place broth mixture, cheese and jalapenos.

    Puree until mixture is smooth.

    Return processed mixture to saucepan and simmer 5 minutes.

    When ready to serve, place some sour cream in each bowl and add soup.
