  • 1 c. butter
  • 3 c. flour
  • 2 tsp. soda
  • 1 tsp. vanilla
  • 1 1/2 c. cherry preserves
  • 6 eggs, separated
  • 2 c. granulated sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. allspice
  • 2/3 c. buttermilk
  • 6 Tbsp. cream
  • 2 c. nuts (pecans or hickory nuts)
  • 1/3 c. bourbon

Directions

    Cream butter and sugar together with mixer until fluffy.

    Sift flour, soda, cinnamon, nutmeg and allspice together three times. By hand, add flour to the creamed mixture alternately with milk. Add cream.

    In a separate bowl, pour bourbon on nuts and allow to soak.

    Next, add vanilla, egg yellows and preserves.

    Beat the egg whites with electric mixer.

    Add the nuts and bourbon to the batter.

    Fold in beaten egg whites.

    Pour batter into three greased and floured round cake pans.

    Bake in a 325° oven for 40 minutes.
